Enchiladas

Ingredients

  • Corn tortillas
  • Cooked and shredded chicken breasts
  • Shredded mozzarella or similar type cheese
  • Enchilada sauce (can be purchased at Latin grocery stores)
  • Chopped onions and cilantro for garnish

Paso 1

Preheat the oven to 180 °C (350 °F).

Paso 2

Heat the tortillas slightly in a frying pan without oil. They do not have to toast, but simply heat them just enough to become flexible.

Paso 3

Fill each tortilla with shredded chicken and grated cheese and roll them as if they were cannelloni.

Paso 4

Place the enchiladas in a baking dish, cover them with the sauce and sprinkle grated cheese on top.

Paso 5 

Bake the enchiladas for about 15-20 minutes, or until the cheese is bubbly and has a nice golden brown gratin.

Paso 6

Garnish with chopped onion and cilantro before serving, if desired.
