Corn is the most widely grown and consumed cereal on the planet. It is a common crop and can be found from northern Russia to southern Chile and has enriched our meals for over 10,000 years. We have corn flakes in our breakfast cereals, sweet corn in our salads and corn syrup in our favorite soft drinks. However, despite the universality of corn, there is still a lot of confusion about what exactly it is: a cereal, a fruit or a vegetable?

We offer nixtamalized white corn flour from the last harvest, which is made under a careful industrial process of nixtamalization, dehydration, milling and packaging. Our Tortiflavor flour is a flour with a combination of creole, white and hybrid corn, which when mixed give a different aroma, flavor and texture. What is corn?

First things first. Corn is the edible seed of a cereal crop of the grass family. At this point, its categorization becomes complicated, because the different forms of corn can be classified as cereal, fruit and vegetable. As the seed of a cereal crop, the corn kernel itself (from which cornmeal and popcorn come) is generally considered a cereal. But whole corn, which is eaten as corn on the cob or as a side dish and in salads, is primarily considered a vegetable. However, corn also fits the definition of a fruit, since it is an edible substance that grows from the seed or flower of a plant. Therefore, corn can be defined as a cereal, a vegetable and a fruit!!

¿ Does corn contain gluten?

Regardless of how it is classified, the most important thing to know about it is that it is gluten-free,regardless of its variety.

DIFFERENT TYPES OF CORN

There are four main types of corn:

Sweet corn: This is the type of corn you will find most often on your plate. It gets its name because it has a higher sugar content than other types of corn, the result of a genetic mutation that prevents sugars from being converted to starch.

Field corn: Also called dent corn because of the distinctive dimple in the kernel, it is the most commonly grown type of corn. Field corn has more starch and lower sugar content than sweet corn. It is used primarily for ethanol production and animal feed, but can sometimes be found in tortilla chips.

Flint corn: Named for its hard outer coating, Flint corn kernels are the kernels used to make popcorn. Flint corn is rich in nutrients and low in sugars. It is mainly ground and used to make cornmeal and polenta.

Corn Flour: As its name suggests, this variety of corn is the type mainly used to make cornmeal, thanks to its high proportion of starch. It is sweeter than flint corn, but not as sweet as sweet corn.

¿ Does corn flour have gluten?

You can be sure that, like the grain itself, flour is gluten-free. However, as with flours made from other gluten-free grains, you should always read the label when buying corn flour to verify that the flour you are buying does not have any risk of contamination, traces of wheat or other gluten-containing grains.

Including corn in a gluten-free diet is a piece of cake (almost literally), and its vibrant color, sweet taste and rich content of vitamins A, B, C and E make it an excellent way to liven up any meal. Use tortiflavor flour to make gluten-free bread, tortillas or even cakes.
